ajonjol\u00ed, es una semilla aceitosa conocido como s\u00e9samo, una oleaginosa de la especie (Sesamum indicum) con origen desconocido, sin embargo se conoce que hay 12 especies en \u00c1frica tropical y en la India, los hay de dos colores blancas y negras, esta semilla contiene \u00e1cidos grasos como la omega 3, fibra y potasio, protector del coraz\u00f3n, se dice que dos cucharadas de ajonjol\u00ed es equivalente a una taza de leche y 180 g de un bistec de res, el ajonjol\u00ed negro contiene mayor cantidad de antioxidantes, estos ayudan al proceso de reducci\u00f3n del colesterol, por su contenido de grasas insaturadas y lectina mejorado el tr\u00e1nsito intestinal.<\/span><\/em><\/strong><\/span><\/p><\/blockquote>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section la India, China, Myanmar y Sud\u00e1n, en algunos pa\u00edses como M\u00e9xico tambi\u00e9n se produce el ajonjol\u00ed en varios estados de la rep\u00fablica como en Sinaloa, Sonora, Oaxaca, Chiapas y Guerrero, m\u00e1s se utiliza para producir aceite comestible, sin embargo la poblaci\u00f3n la conoce muy poco por lo que es necesario hacer conocer a las persona sobre los beneficios saludables y nutritivas de esta semilla a fin de que se incremente el consumo de ajonjol\u00ed en la raci\u00f3n humana en una proporci\u00f3n equilibrada sobre todo por su contenido en omega 3 que junto con el pescado y la linaza es muy bueno para nuestra salud, algunos entendidos en la materia manifiestan que el contenido de la fibra soluble de las semillas del ajonjol\u00ed potencia el efecto cardioprotector y controla la glucosa en la sangre, la fibra insoluble act\u00faa como prebi\u00f3tico favorece la microfauna intestinal, como la mayor\u00eda de los alimentos cultivados, el ajonjol\u00ed contiene compuestos bioactivos, en especial lignanos que tienen alta capacidad antioxidante, protegiendo las c\u00e9lulas del envejecimiento y el da\u00f1o del triglic\u00e9ridos formados por \u00e1cidos grasos mientras que el aceite mineral est\u00e1 constituido por mezclas de hidrocarburos alif\u00e1ticos, motivo por la cual el aceite de ajonjol\u00ed presenta una mayor capacidad de lubricaci\u00f3n. La naturaleza polar del aceite de ajonjol\u00ed le da mayor afinidad por las superficies met\u00e1licas que el aceite mineral no polar\u00b9<\/span><\/em><\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif;\">As\u00ed mismo en distintas investigaciones realizadas sobre el ajonjol\u00ed coinciden en que el ajonjol\u00ed es el condimento m\u00e1s antiguo conocido por el hombre. Lo cierto es que desde hace mucho tiempo esta deliciosa semilla a\u00f1ade sabor y consistencia a nuestros platillos. Sin embargo, tambi\u00e9n puede aprovecharse con fines medicinales\u00b2.
