{"id":6154,"date":"2022-07-02T08:26:13","date_gmt":"2022-07-02T13:26:13","guid":{"rendered":"https:\/\/www.aldia.unah.edu.pe\/?p=6154"},"modified":"2023-03-10T12:42:34","modified_gmt":"2023-03-10T17:42:34","slug":"la-caigua-un-alimento-saludable","status":"publish","type":"post","link":"https:\/\/aldia.unah.edu.pe\/?p=6154","title":{"rendered":"La Caigua, un alimento saludable"},"content":{"rendered":"\r\n<figure id=\"attachment_915\" aria-describedby=\"caption-attachment-915\" style=\"width: 104px\" class=\"wp-caption alignleft\"><img decoding=\"async\" class=\"size-full wp-image-915\" src=\"https:\/\/www.aldia.unah.edu.pe\/wp-content\/uploads\/2020\/05\/JUAN-QUISPE.jpg\" alt=\"\" width=\"104\" height=\"130\" \/><figcaption id=\"caption-attachment-915\" class=\"wp-caption-text\"><span style=\"color: #800000;\"><strong>Juan Quispe Rodr\u00edguez<\/strong><\/span><br \/><span style=\"color: #800000;\"><strong>jquispe@unah.edu.pe<\/strong><\/span><\/figcaption><\/figure>\r\n<hr \/>\r\n<p style=\"text-align: justify;\"><span style=\"font-size: 13pt; color: #666666;\"><strong>La Caigua <em>(<\/em><em>Cyclanthera pedata)<\/em> conocida tambi\u00e9n como achocha o achojcha y pepino de rellenar, es una hortaliza que est\u00e1 nominada como un alimento funcional por algunos estudiosos, ya que por un lado ayuda a reducir el colesterol (LDL) que se acumula en las arterias, es decir el colesterol malo y por otro lado, ayuda a incrementar el colesterol (HDL), conocido como colesterol bueno, lo que le convierte a la caigua en un complemento ideal para el tratamiento de la hipercolesterolemia.<\/strong><\/span><\/p>\r\n<hr \/>\r\n<p style=\"text-align: justify;\"><span style=\"font-size: 13pt;\">La caigua en si es uno de los s\u00faper alimentos procedentes de la rica despensa\u00a0 latinoamericana, es una hortaliza utilizada en la gastronom\u00eda de casi todo el continente americano y en otras partes del mundo, conocida como \u00a0adelgazante natural y un alimento con m\u00faltiples beneficios para la salud.<\/span><\/p>\r\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt;\">Diversos estudios se\u00f1alan que la caigua posee propiedades medicinales sobre todo en la reducci\u00f3n de la hipertensi\u00f3n y el colesterol alto, lo cual la convierte en una hortaliza de especial atractivo. Al ser evaluada como agente reductor del colesterol, se ha observado que el consumo de C. pedata en c\u00e1psulas permitir\u00eda disminuir los niveles de LDL, o colesterol da\u00f1ino, entre un 18 y un 44,5%, comparado con aquellos que no consumieron c\u00e1psulas (grupo placebo), y alcanzaron una disminuci\u00f3n aproximada de un 10% de los niveles de LDL. De manera similar, en un estudio internacional que cont\u00f3 con la participaci\u00f3n de investigadores nacionales, se observ\u00f3 que la caigua presenta propiedades que beneficiar\u00edan el tratamiento de la hipertensi\u00f3n arterial tanto en pacientes diab\u00e9ticos y no diab\u00e9ticos, Seg\u00fan los datos, <em>Cyclanthera pedata<\/em> contribuir\u00eda en una mayor cantidad de carbohidratos totales, fibra cruda, calcio, f\u00f3sforo, hierro y retinol (o vitamina A), siendo este \u00faltimo importante por su funci\u00f3n reguladora de la visi\u00f3n. Sin embargo, la caigua aportar\u00eda menor cantidad de prote\u00ednas, riboflavina (vitamina B2) y vitamina C, lo que refleja la importancia de una dieta variada y bien balanceada\u00b9<\/span><\/p>\r\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt;\"><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0308814613018773#b0030\">Gonzales, Gonez y Villena (1995<\/a>)\u00a0investigaron el uso de dosis orales de caigua natural deshidratada en los niveles de colesterol s\u00e9rico de mujeres posmenop\u00e1usicas.\u00a0Los resultados mostraron una reducci\u00f3n en los niveles de colesterol con una dosis diaria de 1800\u00a0mg de Caigua micro pulverizada.\u00a0El hipercolesterol se redujo del 75% al \u200b\u200b12,5%.\u00a0Los niveles de colesterol LDL disminuyeron, mientras que los niveles de colesterol HDL aumentaron\u00b2<\/span><\/p>\r\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt;\">Caires, O. et al., (2014) en su trabajo de composici\u00f3n mineral de la caigua, demostraron que la caigua ten\u00eda un alto contenido de potasio, calcio,\u00a0<a href=\"https:\/\/www.sciencedirect.com\/topics\/chemistry\/phosphorus\">f\u00f3sforo<\/a>\u00a0y magnesio.\u00a0El contenido de sodio era muy bajo, la caigua puede ser fuertemente recomendada como suplemento nutricional considerando su alto contenido en potasio, calcio, f\u00f3sforo y magnesio. PCA demostr\u00f3 que f\u00f3sforo, sodio, cobre, hierro, zinc y manganeso fueron los elementos que contribuyeron a la variaci\u00f3n que presentaron las muestras.\u00a0Los resultados del HCA fueron compatibles con los resultados del PCA. La caigua tiene una composici\u00f3n mineral similar a la sand\u00eda, el pepino, el chayote, la calabaza y el mel\u00f3n, que tambi\u00e9n son cucurbit\u00e1ceas\u00b3<\/span><\/p>\r\n<hr \/>\r\n<figure id=\"attachment_6157\" aria-describedby=\"caption-attachment-6157\" style=\"width: 1494px\" class=\"wp-caption aligncenter\"><img fetchpriority=\"high\" decoding=\"async\" class=\"
