{"id":5506,"date":"2022-03-05T22:32:51","date_gmt":"2022-03-06T03:32:51","guid":{"rendered":"https:\/\/www.aldia.unah.edu.pe\/?p=5506"},"modified":"2023-03-10T12:53:59","modified_gmt":"2023-03-10T17:53:59","slug":"la-berenjena-saludable-y-nutritiva","status":"publish","type":"post","link":"https:\/\/aldia.unah.edu.pe\/?p=5506","title":{"rendered":"La Berenjena Saludable y Nutritiva"},"content":{"rendered":"\n<figure id=\"attachment_915\" aria-describedby=\"caption-attachment-915\" style=\"width: 104px\" class=\"wp-caption alignleft\"><img decoding=\"async\" class=\"size-full wp-image-915\" src=\"https:\/\/www.aldia.unah.edu.pe\/wp-content\/uploads\/2020\/05\/JUAN-QUISPE.jpg\" alt=\"\" width=\"104\" height=\"130\" \/><figcaption id=\"caption-attachment-915\" class=\"wp-caption-text\"><span style=\"color: #ff0000;\"><strong>Juan Quispe Rodr\u00edguez<\/strong><\/span><br \/><span style=\"color: #ff0000;\"><strong>jquispe@unah.edu.pe<\/strong><\/span><\/figcaption><\/figure>\n<hr \/>\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt; font-family: helvetica, arial, sans-serif;\"><span style=\"font-size: 14pt;\"><strong><span style=\"color: #000080;\">La Berenjena (<em>S<\/em><em>olanum melongena\u00a0L<\/em>) es una planta de la familia de las solan\u00e1ceas, presenta un tallo erecto, velludo y ramificado, la cara posterior de las hojas est\u00e1 cubierta por una capa de pelos parecidos a la lana, las flores son grandes, de color violeta,<\/span><\/strong><\/span><\/span><\/p>\n<hr \/>\n<p style=\"text-align: justify;\"><span style=\"font-family: helvetica, arial, sans-serif; font-size: 12pt;\">con una anchura media de 5 cm, en forma de estrella, requiere de 10 a 12 horas de luz, y es muy sensible al fr\u00edo, su fruto comestible es una baya de 5 hasta 30 cm de longitud, de forma esf\u00e9rica, oblonga y alargada, la m\u00e1s com\u00fan es la de color morado, pero existen: blanca, p\u00farpura, negra, amarilla y roja, la pulpa es consistente, de textura esponjosa, de color blanco, tiene cierto sabor amargo, y presenta peque\u00f1as semillas de color amarillo, es originaria de la India y est\u00e1 disponible todo el a\u00f1o, es rica en calcio potasio y vitaminas A, B y C, la piel es compacta y brillante debemos fijarnos en la frescura del extremo del tallo. (contiene solo 17 calor\u00edas x 100gr) por su alto contenido en agua lo hace ideal para ser incluida en dietas para bajar peso, se puede consumirla guisada, rellena, al horno, rebozada, frita, a la brasa, hervida, al vapor, en cremas y pures.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: helvetica, arial, sans-serif; font-size: 12pt;\">Algunos autores manifiestan que la<em> Solanum melongena<\/em>\u00a0es una especie vegetal conocida popularmente como berenjena, aunque tiene otros nombres comunes. Es una planta herb\u00e1cea muy com\u00fan en la dieta alimentaria que s\u00f3lo puede ser consumida cuando est\u00e1 cocida porque contiene alcaloides termol\u00e1biles que son muy t\u00f3xicos. Se utiliza tradicionalmente en forma de maceraci\u00f3n, decocci\u00f3n, jarabe y c\u00e1psulas para tratar inflamaciones cut\u00e1neas, adelgazar, eliminar los \u00e1cidos grasos del organismo humano, facilita la digesti\u00f3n y previene el c\u00e1ncer estomacal. Estudios farmacol\u00f3gicos demuestran estas propiedades, as\u00ed como el alto efecto antioxidante de preparados del fruto dado la alta composici\u00f3n de flavonoides\u00b9<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: helvetica, arial, sans-serif; font-size: 12pt;\">Del mismo modo, en Alacena se dice que por su alto contenido en agua (superior al 90%) resulta muy adecuada en las dietas de adelgazamiento. Por otra parte, ayuda a prevenir la arteriosclerosis y se recomienda comer berenjena cuando se ingiere abundante comida rica en grasas, ya que no permite que los \u00e1cidos grasos se depositen en las arterias. Se recomienda consumir cuando se padece de h\u00edgado graso porque ayuda a eliminar estos compuestos indeseables. Es importante recordar que s\u00f3lo se pueden utilizar los frutos de esta planta debidamente cocidos, ya que el fruto verde y las otras partes de la planta son altamente venenosos\u00b2<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: helvetica, arial, sans-serif; font-size: 12pt;\">Los beneficios de la berenjena para la salud es que es buena para el coraz\u00f3n, ayuda a mantener un peso ideal, ayuda a controlar el az\u00facar, elimina virus y par\u00e1sitos, previene el c\u00e1ncer y enfermedades de los huesos, es bueno para el embarazo. Su <strong>Composici\u00f3n nutricional<\/strong> en (gr\/100gr.) es la siguiente: Kcalorias (21.02), carbohidratos (2.39), prote\u00ednas (1.25), fibra (2.5) y grasas (0.18) en <strong>Minerales<\/strong> (mg\/100gr): Sodio (3000), calcio (16.39), hierro (0.4), fosforo (21), potasio (210) y <strong>Vitaminas<\/strong> (mg\/100gr): A (0.01), B1 (0.04), B2 (0.05), B3 (0.75), C (5.87).
