Sus tallos estriados y hojas en forma de cu\u00f1a tienen un sabor y olor intensos que se suavizan y endulzan cuando se blanquean, lo que los hace m\u00e1s agradables para la cocina. Adem\u00e1s de sus aplicaciones culinarias, el apio tiene propiedades curativas, es bajo en calor\u00edas y rico en agua y sales minerales. Es una excelente fuente de potasio, esencial para el funcionamiento adecuado del sistema nervioso y muscular. Este vegetal facilita el funcionamiento renal y act\u00faa como un depurativo eficaz, eliminando desechos a trav\u00e9s de la orina. Es ideal para incorporarlo en nuestra dieta diaria y puede ser consumido de m\u00faltiples formas, como en caldos, sopas, ensaladas, aguas frescas, jugos y licuados. Adem\u00e1s, el apio posee propiedades sedantes, diur\u00e9ticas, ligeramente laxantes, aperitivas, digestivas, re mineral\u00edzante, depurativas, regeneradoras de la sangre, antiinfecciosas y cicatrizantes. Es beneficioso para la formaci\u00f3n del esmalte dental, la eliminaci\u00f3n del exceso de \u00e1cido \u00farico y c\u00e1lculos renales, el tratamiento de enfermedades hep\u00e1ticas y la mejora de la memoria. Asimismo, favorece la secreci\u00f3n de saliva y jugos g\u00e1stricos, actuando como diur\u00e9tico y depurativo.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif;\">Kooti et al. se\u00f1alan que, en sus estudios sobre las propiedades del apio, se utilizan partes de la planta como semillas, hojas y aceites esenciales. Entre los compuestos fitoqu\u00edmicos del apio, se incluyen carbohidratos y fenoles como flavonoides, alcaloides y esteroides. La presencia de compuestos como limoneno, selineno, gluc\u00f3sidos de furanocumarina, flavonoides y vitaminas A y C explican por qu\u00e9 el apio es ampliamente utilizado en la medicina tradicional\u00b9.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif;\">Sin embargo, algunas partes de frutas y hortalizas no se consumen y son desechadas pese a su valor nutricional, que incluye antioxidantes y fibra diet\u00e9tica. Este es el caso del tallo de apio y de alcachofa, que han atra\u00eddo atenci\u00f3n por su potencial acci\u00f3n antioxidante y antiinflamatoria\u00b2.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif;\">Seg\u00fan Vida Saludable\u00b3, el apio ofrece numerosos beneficios nutritivos y medicinales. Previene enfermedades cardiovasculares gracias a su contenido en apigenina, un flavonoide con propiedades antioxidantes y antiinflamatorias, que ayuda a prevenir la formaci\u00f3n de placas ateromas y los infartos. Protege el h\u00edgado, especialmente en casos de h\u00edgado graso no alcoh\u00f3lico, aunque es recomendable moderar su consumo si se toman analg\u00e9sicos.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif;\">El apio tambi\u00e9n tiene un efecto preventivo contra la gota al reducir los niveles de \u00e1cido \u00farico en la sangre. Su extracto de semillas, que act\u00faa como antiinflamatorio no esteroideo, ayuda a combatir la artritis y a reducir el dolor articular.
